Summa is a Latin word, for whole-sum. For as highfalutin as that may sound, we're quite casual and relaxed. Our managing partners, Phillip-Pierre Rooks and Scott Rasmussen, became close friends when working together at an area Irish pub nearly a decade ago, where Rooks bartended and Rasmussen consulted as a chef. Together, they’ve got about 30 years’ combined restaurant experience. In the spring of 2022, they noticed N3’s vacancy and initially made a joke about starting something of their own. It quickly turned into a dare, and with family support they bought the building, and opened August 1st. Much of the atmosphere is exposed brick and industrial features, accentuated with plants and puzzles to round out a family pub environment, instead of another bar on the strip.

“Summa” to them represents the culmination of all their respective efforts in the industry. The menu’s built around different styles of comfort food, but not all heavy. Five items from the relatively small list are vegan; a few more are vegetarian and several are gluten-free. Rooks calls it “eclectic comfort food, familiar, but with a twist.” They all had influence on the final dishes.
